Whenever my vegan or non-vegan friends hear about vegan breakfast, the ideas of smoothie, oatmeal and granola come to their minds (9 out of 10). However, vegan breakfast can be MUCH GREATER than just chia smoothies, energy bars or avocado toast! (My favourite foods though.) Recently I did some research online and I found these 5 vegan breakfast recipes very flavourful and easy to make. All can be done in 15 minutes. Choo Choo! Time to bring your breakfast to the next level!

1. Vegan French Toast

Can you believe it? Vegan French toast without eggs and milk tastes almost the same as actual French toast. Vanilla almond breeze almond milk and nutritional yeast are used to substitute milk and eggs. The toast would also be gluten-free if you substitute the bread with gluten-free bread. So what are you waiting for? Start your day with this tender and fluffy vegan French toast!

Note: Nutritional yeast is not the same as baking yeast. Look for yellow nutritional yeast flakes in the bulk bins of your health food store.

2. Vegan Scrambled Eggs (Tofu)

Eggs seem to be an essential food in breakfast. All day breakfast, eggs Benedict, pancakes, omelettes, whenever you talk about breakfast, you think of eggs. These two words seemed inevitably connected in every way. However, eggs for breakfast is no longer just a dream to vegans ever since the invention of the first vegan eggs. For this recipe, you can make yummy vegan eggs with tofu, granulated onion, granulated garlic, turmeric, salt, pepper, and nutritional yeast.

Note: Use the kind of tofu that comes packed in a tub of water and select the firmest one they have to mimic the texture of eggs.

3. Vegan Blueberry Muffins

Craving for some sweetness to brighten up the morning? These velvety blueberry muffins are gluten-free, low fat and dairy free. The egg mixture is mixed with plant based milk, ground flax seed and almond flour to mimic the thick egg like texture of the traditional mix. Instead of sugar, the muffins are sweetened with maple syrup. Yum!

Note: Make the mixture the night before and store in the refrigerator until ready to bake in the next morning to save some sleeping time.

4. The Zen Quinoa Bowl

Learn to make the sumptuous and delicious Hawaiian Zen bowl to boost energy for the day! It’s easy to make, full of delicious flavours, and super healthy. Broccolini, kale, tomatoes, shredded carrots, and mushrooms are added to the bowl with protein-rich quinoa as the base. The key ingredient in this bowl is curry powder, which adds such a great flavour to the veggies and tofu.

5. Strawberry Quinoa Bowl

Cereal with milk is always a comfort food (and childhood memories 🙂 ) to a lot of people. When you get bored eating cereals for breakfast everyday, try to spice up the flavours by creating different combinations! Quinoa with strawberry milk brings a fresh tasting experience which you won’t regret trying. Instead of using plain almond milk, fruit infused milk will certainly take things up a notch!

Note: Quinoa breakfast bowls are also meal-prep friendly. Make a batch of the quinoa and milk on a Sunday and enjoy this type of meal all week long.
