If you live in South-East Asia, chances are that you have eaten a curry. Here in Singapore, the humble chicken curry takes on many forms. From the classic, traditional curry (colloquially called ‘lemak chicken curry’), to subtly-spiced Thai Red and Green curries, to healthier recipes for those watching waistlines, there is at least one recipe guaranteed to suit your every mood.

Here are 6 easy recipes for chicken curries to kick off your weekend and build confidence in taking on the curry world:

1. Traditional Chicken Curry

This is the all-time-classic potatoes and coconut milk curry dish that most of us were first introduced. It is a basic, hearty curry best shared with family and friends. You can buy pre-mixed curry powders at any supermarket.

5. Nyonya Chicken Curry

Peranakan food in Singapore would not be true to its heritage without Nyonya Curry. Intermarriage gave rise to Peranakans (or Nyonyas), and spices from each culture were incorporated into local cuisines. This gave rise to a smorgasbord that is uniquely Peranakan. Nyonya curries are akin to traditional curries on steroids, infusing aromas from spices such as cloves, cinnamon, lemon grass and belachan (an aromatic, tangy shrimp paste). There is nothing more comforting than savoring its spicy richness on a cold, rainy day.
