Easy Vegan Tofu Scramble

  • 1/2 carrot ⠀
  • 1/2 cup frozen peas ⠀
  • 1 small onion ⠀
  • 1 block of extra firm tofu ⠀
  • 1/2 avocado ⠀
  • 1 tsp oil⠀
  • seasoning to taste


  • sauté onion, carrot and peas in a heated pan with oil until cooked⠀
  • crush up block of tofu with hands and add it to the pan along with desired seasonings (salt, pepper, turmeric and garlic powde⠀
  • add about 1/4 cup of water and let the tofu cook⠀
  • top with avocado and chopped cashews (optiona⠀


Could be a scrambled eggs alternative for those who are trying to get plant based protein :)
And it's less heavy!
