Prepare the bread pudding: Preheat oven to 155°c. Grease 21” x 21” glass casserole with butter. Tear the bread slices into small pieces and lay them in the casserole.
In a medium mixing bowl, combine eggs, milk, 2 tbsp of chocolate chips, sugar, melted butter, cinnamon and vanilla. Mix thoroughly, pour over the bread in the casserole.
Sprinkle the remaining 1 tbsp of chocolate over the pudding. Pop it into the oven and bake for about 30 - 35 mins or until the top is browned and springs back when lightly tapped.
Prepare the custard sauce: In a saucepan, pour in all ingredients for custard. Whisk it till slightly thickens. Remove from heat, set aside.
Combine and serve: Bread pudding can be served warm or cold. Pour over the custard sauce on the bread pudding and enjoy!
