Easy Vegan Tofu Scramble

Ingredients
- 1/2 carrot ⠀
- 1/2 cup frozen peas ⠀
- 1 small onion ⠀
- 1 block of extra firm tofu ⠀
- 1/2 avocado ⠀
- 1 tsp oil⠀
- seasoning to taste
Instructions
- sauté onion, carrot and peas in a heated pan with oil until cooked⠀
- crush up block of tofu with hands and add it to the pan along with desired seasonings (salt, pepper, turmeric and garlic powde⠀
- add about 1/4 cup of water and let the tofu cook⠀
- top with avocado and chopped cashews (optiona⠀
